Blueberries

Not many ingredients, very simple
I never like Blueberries growing up. I think its the fact that most of the time, you never know what your going to get. They could be sour, mushy, or just gross! But when you get a good one, its all worth it.They are such a treat, and always feel like summertime. This summer, my house has had a never ending supply of blueberries. We had to come up with something to do with them besides just popping them in our mouths! We discovered a GREAT lemon blueberry bread recipe. And the best part is, its a light recipe! I am also going to try a blueberry tart.. sometime. But we always end up using the bread recipe. So i am going to share it with you. Its really simple, and soo delicious. It can be breakfast, dessert, and anything in between.

Low fat Lemon Blueberry Bread


Prep time: 15 minutes

Cook Time: 60 minutes

Total Time: 75 minutes

Ingredients:

  • 1/4 cup canola oil
  • 2 tbsp lemon juice
  • 2 eggs, lightly beaten
  • 1/2 cup nonfat milk
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 3/4 cup sugar
  • 1 tsp salt
  • 2 tbsp lemon zest
  • 1 cup fresh blueberries (or frozen)

Preparation:

Preheat oven to 350 degrees.
In a small bowl, combine oil, lemon juice, eggs and milk. Place flour, baking powder, sugar, and salt in a large bowl. Make a well in the dry ingredients. Add wet ingredients to dry, stirring until just moist. Fold in lemon zest and blueberries. Empty batter into loaf pan and bake for an hour or until a toothpick inserted in the center comes out clean.
Yield: 1 loaf (12 slices)
