Craisins

Craisins are great. They can be eaten plain, but they are also great on salads, and lots of other things! They are healthy, and a good sweet bite. The other day, i was looking for a new cookie recipe. I was limited on ingredients, but i knew we had white chocolate, oats, and the basic stuff for cookies.. (flour, sugar, etc.) so i googled some recipes and came across Oatmeal Cranberry White Chocolate Chunk CookiesNow i know that sounds like alot is going on.. but trust me. theyre good. Its something different from the typical chocolate chip. Not that theres anything wrong with chocolate chip of course. Little did i know, the recipe is actually on the craisins package.. as of right now. i found that our later. This is such an easy recipe, and so worth it. Plus, craisins are healthy. So thats how you can justify eating one. or two.. or ten. Ok, now as for some other uses for craisins, I discovered one. You may think it is odd, but no judgement till you try it. I LOVE ham and cheese sandwiches. I add sea salt and its so yummy. Now add some craisins. perfection. It adds the sweetness that the sandwich needs. Think about it. You put cranberry sauce on turkey at thanksgiving! Now how is this any different?



I used ghirardelli white chocolate chips, and they were great. Chunks would just be more chocolate so whatever floats your boat. 

Oatmeal Cranberry White Chocolate Chunk Cookies




Ingredients:

2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 6-ounce package Ocean Spray® Craisins® Original Dried Cranberries
2/3 cup white chocolate chunks or chips

Directions:

Preheat oven to 375ºF.

Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chunks.

Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.

Makes approximately 2 1/2 dozen cookies.
